Conference Rolls and other Yummy-ness!


Two times per year, 1st weekend in October and April our church has an online international general conference for all to view.         It is an uplifting broadcast of testimonies of Jesus Christ, hope, and love of God.  I have tried to make this a time the children enjoyed while they were growing up.  Hence, the creation of Conference Rolls.  Now, with children grown, the tradition continues to the next generations.

Part of the reason for this post is that my daughters ask for the recipe;

Conference Rolls Master Recipe                        Makes 2- 9×13” pans

For the dough:

1 Tablespoon active dry yeast

1 cup warm whole milk (about 110ºF) (*¼ cup orange juice concentrate)

1/2 cup sugar

1/3 cup butter, melted

2 eggs, room temperature & beaten

1 teaspoon salt

4 to 4-1/2 cups all-purpose flour

Options: lemon or orange zest or vanilla

  • Place milk into a large measuring cup or bowl.  Add sugar and yeast.  Stir to dissolve.  Let proof until bubbly.  Place 4 cups flour and salt in a large bowl.  Stir in proofed yeast mixture, butter, and eggs.  Knead dough on board with approx ½ cup flour until smooth (about 7 minutes).  Cover with a towel and let rise until the dough has doubled, about 1 hour.
  • Roll out dough 1/2 inch thick on a floured board. 
  • Prepare cookie sheets with sides, well-greased.  
  • Spread dough with butter and add toppings.  Roll up and cut into 1 to 1 ½” thick slices. Place onto 2-greased 9×13” pans or cookie sheets.

For the Filling:

Melted butter

Brown sugar

Cinnamon, nutmeg, cardamon

Raisins, chocolate chips, chopped walnuts, raspberries

  • Cover with a towel and let rise about 1 hour, till doubled
  • Preheat oven to 350’
  • Bake for 20 to 25 minutes, until lightly golden brown.
  • While baking mix up frosting.
    For the Icing:

    1 cup butter, softened

    1/2 cup cream cheese, softened

    1 teaspoon vanilla 

    1/4 teaspoon sea salt

    3 cups confectioners’ sugar

    Orange zest, opt.

    • In a bowl whip and mix all ingredients, until smooth thick frosting.
    • After rolls and cooled slightly frost.
    • Options; dust with cinnamon, place fresh raspberries on top

    Savory Rolls 

    • Dough add minced herbs and reduce to ⅛ cup sugar
    • Roll out as Conference rolls or make like a pizza
    • Fillings: in place of melted butter use pesto, melted butter, roasted garlic & olive oil, or marinara.
    • Filling toppings; bacon, chopped steamed broccoli, cheeses,  diced pancetta, diced pepperoni, etc.
