Whole Grain Sourdough Pancakes and Fritters

I love to cook healthy, delicious foods.

Good food has the ability to enliven the “soul”.    Seasonal foods and good recipes with variations are important to me.  Who wants to be bored?

Whole Grain Sourdough Pancakes and Fritters

~Master Recipe~ Makes 12

This recipe is for both pancakes and fritters.  You can choose what grains and seeds to add.          The fritters can be sweet or savory.  The variations are endless.  The reason there are no added fats to the batter is that I love to cook (pan fry) pancakes and fritters for crisper edges without the guilt of extra fats.

½ cup sourdough discard*

½ cup oatmeal

½ cup cornmeal

½ cup flour, whole wheat or white

2 tablespoons seeds or chopped nuts, optional

1 ½ cups water, milk, kefir, or buttermilk

Place in a mixing bowl and stir till well blended. Cover with lid or plastic wrap overnight on the counter.

Add to bowl:

2 eggs

1 teaspoon baking powder

½ teaspoon sea salt

Mix well.  The consistency should be like thick cake batter. 

Heat a skillet with 2 tablespoons of coconut oil. Spoon batter desired size into skillet, and cook for a few minutes until you start to see bubbles. Flip and cook till golden brown.  Serve with real maple syrup, nut butter, jam, or fruit.

Any whole grain may be used, in flour form or the grains will need to be precooked.  Seeds or nuts can include but are not limited to; ground flax, poppy, sesame, chia, chopped; walnuts, almonds, pecans, etc.

Fritters

Follow basic Whole Grain Sourdough Pancake Recipe, adjusting whole grains as desired. Cook in a skillet, as directed.

Sweet Fritters: choose one and stir in 1 cup grated apples or pears, 1 cup berries or pitted cherries, 1 cup diced peaches, pineapple, apricots, or plums.  Add cinnamon, vanilla, nutmeg as desired. Serve with real maple syrup or dust with powdered sugar.

Savory Fritters: Add 1 cup grated zucchini or summer squash, carrots, corn kernels, chopped steamed broccoli, or cauliflower. If desired add ¼ cup diced ham or cooked bacon.  Season with garlic and herbs of choice.  Add ¼ cup grated parmesan cheese. Serve plain or top with sour cream.

*Sourdough Discard = Before feeding your sourdough, most people remove a portion of it to help build the strength of the sourdough to lift and rise the bread or other baked goods.
