Summer Deliciousness ~ Pesto

Have you ever found a food that is in your top 10?

Pesto & Basil are one of mine.

Basil how do I love thee, let me count the ways:

  • Shredded in salads
  • On sandwiches
  • Shreds on top of many main dishes and soups
  • PESTO….on pasta, corn on the cob, toast, chicken, baked potatoes, etc
  • And the most important….on a spoon or finger.

This week I made this beautiful, easy dish.

Zucchini Pancakes topped with Pesto and served with fresh Tomatoes.

2 cups whole wheat sourdough starter

1/2 teaspoon salt

1/4 teaspoon baking soda

2 eggs

1 medium sized, tender zucchini, grated

In mixing bowl; add sourdough starter, salt, baking soda and eggs.  Mix till smooth.  Add grated zucchini.

Heat a griddle on medium high heat.  Great generously with coconut oil.  Drop 1/3 cup spoonfuls of batter onto griddle.  Cook till bubbles pop on top and flip.
